Fresh Friday: Lox & Avocado Cream Cheese

Well I have some good news. I am now the owner of Photoshop Lightroom 4! I knew you would be excited! I have been using trial versions of Photoshop CS6 and of Lightroom for a few months now, trying to figure out if CS6 was worth the money for what I do on it. Lightroom is just so easy and fast for the editing that I do. I promise I'm not trying to sell you either of these programs. I'm just excited to own it now :) I apologize for my changing of watermarks on my pictures. I promise, this one is here to stay. It's ok to get excited.

This week, I thought it would be fun to take a trip down to the Auckland Fish Market, and make something with the goods I found there. It's down on the waterfront (go figure), and I just love the Auckland waterfront, so I decided to take a photography trip to show you, as well as the recipe.

The water was so calm. It was beautiful.

It had been a rainy day, and was easing just as I was taking the pictures. I was thankful for that. I even got to chatting with some fishermen who noticed I was taking pictures of their boat. The kindness of New Zealanders will always warm my heart.

Back to the fish market. Wait, side note... Am I mentioning too many things in this post? If I confuse you, just skip to the recipe. I know I can get on a talking, or typing ramble. Forgive me for that. Now back to the fish market again. I really love the Auckland Fish Market. It makes me happy. Even though I haven't ever bought a whole fish like this (what would I do with that much fish for two people?!?) I cant help but look every time to see what they have. Its just too much fun!

But this is where I was headed for this weeks Fresh Friday post. I was looking for smoked salmon. Oh yes! I was beyond thrilled at this point :)

Now shall we get on to the recipe? I wont make you wait any longer.

The base of the recipe is a bagel. I used Parmesan bagels but I would bet an everything bagel would be fantastic too! PS, you like how I bought the brand from NY? I did have a little bit of USA spirit this week.

Chop up some fresh dill, and cut a lemon in half for the juice. You can also slice some thin cuts of lemon for garnish.

Cut a few really thin slices of red onion.

Cut an avocado in half. I used a half of an avocado for the spread. This was for one person (my hubs isn't a fan of avocado. I know! Horrible.) Use a whole avocado for two people.

To make the spread, mix the avocado with cream cheese, a splash or two of lemon juice, some dill, and (not pictured) freshly ground salt and pepper. Combine with a fork. Leave a little chunky. It just tastes better. You'll see :)

And of course, this wouldn't be Lox without the - well - lox! I am full of brilliant responses. Just ask. Lox is just smoked salmon. That's it. So awesome. I'm a convert.

Time for assembly. Not too bad on the ingredients right? I decided to leave out the ever popular capers for my dish, because, if I'm going to be quite honest, I don't want to buy too many ingredients that are going to last me more than the three weeks that we have left here. But feel free to add it in yours. I'm sure it would be fabulous, but just make sure to leave out the salt if you do, because capers are quite salty.

Spread the avocado cream cheese on the bagel (toasted or not - I didn't), then layer on the lox, squeeze a little more lemon juice, a few more sprigs of dill, and the red onion and capers if you'd like. Done and done!

My husband didn't think he would like this one. He is a little bit of a picky eater (I love you!!!), and of course, I left out the avocado for him, but he was thoroughly impressed! I was happy for him trying it at all. And I like the homemade version a lot better than ones I have gotten eating out. You'll be impressed by how easy it is to make too! I hope you guys enjoy it.

Lox & Avocado Cream CheesePrintable Recipe
serves 2

ingredients:
  • 2 Parmesan or everything bagels
  • 200g (7 oz) fresh smoked salmon
  • 1 whole avocado
  • 1/3 cup cream cheese (or as much as desired)
  • 1 lemon (for about 2 Tbsp lemon juice)
  • a few slices red onion
  • 1 Tbsp freshly chopped dill, divided
  • freshly ground salt and pepper, as desired
  • capers (optional - I left out)
directions:
  1. Cut bagel in half and toast if desired (I didn't)
  2. Combine avocado, cream cheese, 1/2 Tbsp dill, about 1 Tbsp fresh lemon juice (or as much as desired), salt and pepper in a bowl. Mash with a fork to combine, but leave slightly chunky.
  3. Spread this mixture onto cut bagel
  4. Put about 100g (3.5 oz) smoked salmon on each whole bagel, 1.75 oz on each half.
  5. Top with more lemon juice, as desired, and more dill.
  6. Serve immediately

  2. As I sit here listening (and feeling) my stomach demand I feed it something for breakfast, I get this post in my email box and now am craving lox and salmon bagels. Oh the cruelty.
    That fish market looks amazing.

    Do you know the metric system easily now Carla? Was it difficult to learn? I've recently told myself I need to learn it. It's ridiculous that America is not on this system when almost all of the rest of the world is. Why are we so behind everything???

    As far as the kindness of the New Zealanders, I could not agree more. When we visited I was so incredibly impressed with everyone we met and/or passed by on the streets. Quite refreshing to know that somewhere there are people who will still smile and give a kind hello in passing.

    Back to the recipe, I would never have thought to mix cream cheese and avocado together for a spread. Yumm, where did you get your adventures in cooking and talent from?

Hahaha ok ok you are completely right my love, I'm very picky but I am so grateful to have you as my wife who always comes up with the most amazing meals!! You always push me to try something new. And like you said, I wasn't sure if I would like lox and cream cheese but I trusted you and WOW. I would eat that dish everyday!!! It so light and refreshing and just downright delicious!! Thank you for being a foodie, my love :)

  6. Such a special post!I am sure you will miss all of that, but I am SOOO excited for you to be HOME and with your wonderful family! I really would like this for lunch today - all our seafood / pizza talk - this is kinda (ok long streach) like a sea food pizza - minus the cheese ha ha! Looks so fresh and yummy!
