Its a game we like to play.
Matt is on the lookout for another job. Unfortunately, the Portland job didn't pan out. I promise (biased as I may be) Matt is very talented at what he does! The company just wasn't able to keep him because the projects had to be scaled back. We figured that we could stay in Portland and annoy my brother and sister-in-law while we searched for another job, or we could come back to Reno, spend time with family we haven't seen as much and continue the job search here. We opted for that one, so we didn't wear out our welcome in Portland too early on.
When we were living in Reno before we moved to New Zealand, we found a gym that we fell in love with. It is a boxing and CrossFit gym called Elite Boxing & Fitness. It is smaller, which meant that we made really great friends with the people who go there, and the owner, who is both the funniest and toughest girls you'll ever meet in your life (Love you Ashley!!!) We mostly did the CrossFit workouts which if you know what CrossFit is, you know how hard they are. If you don't know what CrossFit is, you should check it out here.
When we moved to New Zealand, we wanted to find a CrossFit gym, but found that it was waaaaaaayy too expensive (I mean like $300 per month per person!). We tried doing a bit of it on our own, but lets be honest. It is hard to motivate yourselves when there is no gym to go to, and when you have baked goods calling your name left and right.
Needless to say, in the last two years, we have lost a little bit of the "fitness" we had when we were going to the gym. We have been wanting to go back and see our friends again from there, so we started going again this week.
It sure made us realize what we have been missing for the last two years, and how out of shape we are (funny what happens when you don't work out... Hmmm)
Now that we are back into it (woohoo! We've made it three days!), we are trying to eat a little healthier, and drink mostly water throughout the day.
Oh soda, how I miss you so.
I am a huge fan of sandwiches and wraps, so when I was trying to think of what Fresh Friday would be this week, it only seemed natural with going back to the gym, craving sandwiches, and also with a little help from the hubs, that a healthy wrap would be in order.
You may remember my Vegetarian Sandwich toward the beginning of starting Fresh Fridays. This wrap may look similar, but I promise you will be getting a very different taste than that sandwich.
I used spinach wraps, which ups the health factor right away (at least I like to think so!), and I also used spinach artichoke hummus instead of normal sandwich condiments. I found some broccoli sprouts as well, which I have read are super healthy for you. This wrap was so incredibly good that it truly needed nothing else. But it is also very adaptable as well, so feel free to make it however you like. Just promise me you'll make it soon!
- spinach wraps
- spinach artichoke hummus, or you can use homemade hummus
- avocado, sliced
- tomatoes, sliced
- carrots, thinly sliced
- yellow or other colored bell pepper, sliced
- red onion, thinly sliced
- cucumber, sliced thinly
- broccoli sprouts
- Spread a thin layer of hummus over the spinach wrap.
- Add your desired veggies and desired amount over the middle of the wrap
- Fold one side of the wrap over, then the other, to meet almost in the middle. Fold a third side over and continue rolling until everything is on the inside. Seal with extra hummus if it doesn't hold.
- Cut in half and enjoy.
- Serve with some whole wheat pita crisps, or other healthy snack.
