Pumpkin Spice Coffee Cake

This Pumpkin Spice Coffee Cake will really get you ready for Fall and goes absolutely perfect with a morning cup o' Joe!

So I might be a few days late to the punch line, but better late than never right?

I agree.

I finally did it. I broke out the can of pumpkin! And I might be slightly kicking myself in the pants for waiting so long. But I do know I wont be sick of it come Thanksgiving, so I guess that makes it worth it.

Alright, before we talk about this cake I need to get something off my chest.

Matt and I cannot seem to watch a TV series while it is actually on TV. We are always behind on it, thanks to either not having cable, or not having a place to live. You know, it's no big deal.

Anyway, we try to catch up on our fave shows via Netflix, and we started watching Lost a few months ago. We are up to season 4, but havent been watching it as regularly as we were before. Otherwise we would have been done by now.

Anywayyy, we are on season 4.

There are 6 seasons.

We have heard all about how the ending is super controversial, most people hate the ending, etc, and it just makes us want to get to the end all that more.

Then, this last weekend we decide to make a stupid decision.

I know what you're thinking, and no we didnt watch the series finale just to find out what happened.

No, we just made the dumb decision to watch a dumb movie.

Called This is 40. Heard of it??

Yeah.... not even mentioning how crass, vulgar and raunchy that movie is (seriously DON"T watch it!), it did the unthinkable!

It GAVE AWAY THE ENDING OF LOST! Are you flipping kidding me?!

Can you tell Im a little mad? Cause I am. Yeah I know we waited a super long time to start the series. Yes I know the series ended like two years ago, but what movie ever gives away the ending of... ANYTHING?!

Ok, ok Im off my soap box now.

In other news, we are thinking of starting Breaking Bad. Anyone want to give away that ending for me? (JK, please dont).

Now that I filled my daily quota of complaints, let's move on to the yummily delicious Pumpkin Spice Coffee Cake.

I am in love. Seriously, I think I found my new favorite breakfast food.

Not even a joke.

And that is comparing to bacon.

I might choose this over bacon.

Ok, let me retract and reword. I would choose this AND bacon.

This beautiful breakfast treat is made with cake flour and sour cream, of course pumpkin, and pumpkin pie spice.

Does. It. Get. Better. Than. That.

Yes! It does. It has a glaze.

Glaze is everything. Oh plus the streusel. Yeah, you can't get much better than this coffee cake.

Long story short, don't watch This is 40. Do watch Lost. Tell me whether to watch Breaking Bad or not, and finally, make this coffee cake.

You will not be disappointed.

Pumpkin Spice Coffee Cake | Printable Recipe

serves 10-12


for the cake:
  • 1 1/2 sticks (3/4 cup) salted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs (at room temp if you have the time)
  • 2 tsp vanilla extract
  • 3/4 cup sour cream
  • 2 1/2 cups cake flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup canned pumpkin
  • 2 tsp pumpkin pie spice
for the streusel:
  • 1/4 cup packed brown sugar
  • 1/2 cup all purpose flour
  • 1tsp pumpkin pie spice
  • 3 Tbsp cold salted butter, cut into pieces
for the glaze:
  • 3/4 cup powdered sugar
  • 1 tsp cinnamon
  • 1-2 Tbsp milk, to desired consistency
  1. Preheat oven to 350°F/180°C, and spray a 12" cake pan with non-stick spray. (NOTE: you can use a smaller pan, but make sure to adjust cooking time to allow proper cooking time).
  2. In the bowl of a stand mixer, beat together the sugar and softened butter about 5 minutes until light and fluffy. Add in the eggs one at a time, and then the vanilla and mix until fully incorporated.
  3. In a separate bowl, whisk together the cake flour, baking soda, baking powder and pumpkin pie spice.
  4. Turn the mixer on low and slowly add the dry ingredients to the wet ingredients and mix until fully incorporated. Finally mix in the pumpkin and mix well.
  5. Pour the batter into the prepared cake pan and flatten out.
  6. Before you bake, make the streusel. In a small measuring bowl, mix together the flour, brown sugar, pumpkin pie spice and the cold butter, using your hands to break up the butter, until you get chunks of butter throughout the mixture.
  7. Divide the streusel over the top of the cake until it is fully covered, and bake in the preheated oven 55-65 minutes, until a skewer comes out fully clean when inserted in the middle.
  8. Remove from oven and allow to cool completely. Turn out the cake onto your favorite cake stand and make the glaze.
  9. In a measuring bowl, combine the powdered sugar, cinnamon and enough milk to bring it to your desired consistency, and pour over cake.
  10. Enjoy!

  2. Can't talk about the shows, I don't watch them. BUT, I can finally talk about one of your treats! THIS IS WONDERFUL! Everyone MUST make this. This is so light and yummy and pumpkin is a winner in my book anytime, but as a coffee cake - THE BEST!
